Nori Cookies

We wanted to make a cookie that people can enjoy every day. It should taste good and be affordable. This is our nori cookies. We use Chinese nori, specifically Zicai. It is the same type used in soups. We select the first harvest from Xiapu, Fujian. The first harvest is the most tender and flavorful. We grind the nori into a powder and sift it through an 80-mesh screen. Then we mix it into the dough. This gives every cookie a consistent flavor. We add about 4% nori powder. We use a tiny amount of MSG for taste, staying within national limits. This helps us control costs.

Nori can have a fishy smell if not handled right. We use two methods to solve this. First, we roast the nori powder at a low temperature before using it. This removes the raw smell. Second, we add a little ginger powder and five-spice powder to the dough. The amount is very small. You cannot taste them, but they remove the fishy smell. We bake at around 180 degrees for a quick set. The result is a pure savory nori cookies with no off-flavors. Even children can enjoy it.

Each cookie is 7 grams. It is a perfect one-bite size. We recommend small packs, like 7 grams per pack, with 20 packs in a bag. This keeps them dry and hygienic. They are great for convenience stores and vending machines. The moisture is controlled below 3%. This allows for long storage. Nori absorbs moisture easily. We use a thick aluminum foil bag for packaging. Once opened, it is best to finish within a week. We also have test reports for pesticide and heavy metal residues. Lead and arsenic levels are well below national standards.
