Description

A Cross-Over for Health and Indulgence
We wanted to create a cookie that gives you the healthy feeling of oats and the indulgent taste of mocha. That is the Mocha Oatmeal Cookies. If you are in a hurry in the morning, you can eat two with milk and feel full. If you feel sleepy in the afternoon, you can eat two with coffee for a boost. It is for those consumers who want to be healthy but still enjoy a treat. It is a good fit for the breakfast section in a convenience store, a snack bar near a gym, or an office snack drawer. The recipe uses oats as the main ingredient, with coffee as a supporting flavor and chocolate as a finishing touch.

Oats, Coffee, and Chocolate in Balance
We add 30% Australian rolled oats. Some of the oats are ground into flour, and some are kept as flakes. The oat flakes give a solid chewy texture and make you feel full. They also add dietary fiber. We add 1.5% deep-roast coffee powder. The coffee taste is mild and blends into the grain flavor of the oats. It does not hit you hard. We add 5% heat-resistant chocolate chips with 58% cocoa. You get a small chocolate surprise once in a while. Because of the high oat content, the Mocha Oatmeal Cookies are not as crumbly as regular cookies. They are more dense and need more chewing. The more you chew, the more the oat and coffee flavors come out. The smell of roasted oats and coffee fills your mouth.
Health Numbers and Practical Advice
The health profile is very good. The dietary fiber is about 7.5 grams per 100 grams. This comes from the oats and can be used for a "high fiber" claim. We use 25% less sugar than regular sweet cookies. The sweetness mainly comes from the chocolate chips and a little brown sugar. It is not very sweet. It tastes more like the original grain. The satiety level is about 30% higher than regular cookies. This is thanks to the oats. Two cookies can keep you full for two hours. We use some coconut oil instead of butter. It matches the oat flavor better and lowers the saturated fat ratio. The standard oat amount is 30%. You can increase it to 40%, but the cookie will become harder and require more chewing. The chocolate amount is 5%. If you make a version without chocolate, you get a pure oat coffee cookie. That is good for strict health seekers. We suggest a round cookie 50 millimeters wide and 8 millimeters thick. A thicker cookie feels more satisfying. For packaging, a family pack of 200 to 300 grams in a bag is good for selling more. You can also make it into a breakfast bar shape, which is good for a meal-replacement scene. The shelf life is 10 months. Oats are stable, but the fat content is not low. You still need to protect from oxidation.
