Soft Like a Cloud

 

Our bread toast with milk is made to be very soft. Some toast is dry. Some does not have enough milk taste. We wanted to make one that is both soft and full of milk flavor. So we call it bread toast with milk. It is as soft as a cloud and as pure as milk. You can tear it with your hands. You can feel the fine texture and smell the rich milk. You can also slice it and toast it. Add some honey or jam. However you eat it, it adds a warm feeling to your breakfast.

Three Kinds of Dairy

 

This toast uses a lot of dairy products. We use a three-dairy recipe. We add 8% milk powder from New Zealand. We add 5% condensed milk. We also add 6% fresh cream. Together, the total milk solid content is 19%. Normal milk toast usually has only 8% to 10%. So this toast has a very strong milk taste. We tested it with a tool. The key substance for milk smell is called diacetyl. This toast has 0.35 micrograms per gram of diacetyl. That is three times more than normal toast. When you open the package, the milk smell comes out right away.

Long Fermentation, Fine Texture

 

We use Japanese-style strong flour for this toast. The protein content is 14.2%. This flour holds more water and forms good gluten. We use a 24-hour slow fermentation. After mixing the dough, we put it in a fridge at 4°C. The yeast works slowly at this low temperature. This creates more amino acids and flavor. The gluten also absorbs water well. It becomes very stretchy. We bake it in a covered square mold. The top heat is 200°C and bottom heat is 220°C. We bake for 30 minutes. When it comes out, we take it out of the mold right away. We let it cool on its side to keep its shape. We tested the texture with a tool. The hardness of the bread inside is only 280 grams. The elasticity is 0.92. When you press it, it springs back fast. The air holes inside are thin and even. When you tear it, you see long thin strings. There are no rough holes. Each package has a net weight of 400 grams. It has about 10 slices. The shelf life is 90 days. One of our clients runs a premium supermarket. He said many moms buy this for their kids to make sandwiches. Their kids are picky, but this toast is soft and smells like milk. So the kids are happy to eat it.
